Cheesecake, while on a diet. Wait! What?
From one cheesecake lover to another, I give you a cheesecake you can eat minus the guilt. Almost. I wouldn’t suggest you eat it everyday but I would recommend you make a batch and treat yourself this weekend, or the next late night TV session you have planned.
So I was on the hunt for something sweet this past week, something that I could savor and enjoy without the lasting guilt of a slice of devils food cake or a krispy cream donut. AND , I found it, a low fat cheesecake that taste like store bought; which we all know means smooth, creamy, perfection at your fingertips. Today I share with you my healthy’ish cheesecake recipe.

Healthy’ish Cheesecake
8 oz Cream Cheese | fat free
8 oz Sour Cream | fat free
1 tbsp Torani Vanilla Bean Syrup | sugar free
6 tbsp Oat Bran
3 tsp Splenda Brown Sugar
1/2 tsp Cinnamon
3 tsp Water | warm
*makes 4 servings
Start by mixing your Oat Bran, Brown Sugar, Cinnamon, and Water in a small bowl. once it has come together in a crumbly form, press into four personal-sized ramekins.
Bake at 350 degrees for about 5 to 8 minutes. until firm and no longer falling apart. Once baked place in your fridge to completely cool.
Next you’ll whip together your Cream Cheese and Sour Cream, once completely lump free, and beautifully smooth, add in your Torani Syrup, taste and add more if you desire. Mix one final time until thoroughly combined.
Divide equally into all four “cooled” ramekins and place back in the fridge to firm up, at least 2 hour.
Serve and enjoy!

BAKERS NOTES :: When we were trying to perfect this recipe I made only half batches as I feared throwing out a lot of great ingredients. I had one for myself and shared one for Lindsay, of course. We both agreed it tasted incredible and this is why I am sharing it with you today. In all it’s smooth, rich, perfect glory! Note this recipe is very rich, but not as dense as your traditional cheesecake as we have not used eggs, nor baked it. BUT I promise you it will satisfy any cheesecake craving. Got all my inspiration from a fellow Dukan’er here, as you can see she used cool whip which I have no doubt will give a great fluffy texture. I shall try this next!
