So, it’s 5pm, you’re well into making two dinner {mothers of picky eaters, you’ll understand} and you glance at the calendar as you open the fridge to grab condiments and you see it. There in big bold letters, Sofia’s Special Helper Day – BRING SNACKS. Fan-freaking-tastic! You better believe I’m not that mom who has a stash of 25 of something that I can whip out and save the day with, so from scratch it is. Hunted high and low, and by this I mean googled “snacks to feed 25 kids” and the first word that caught my eye was granola bars. Hit up Pinterest and found a peanut and nut free granola bar that I knew I could use the basic idea of and throw in what I had available in our pantry. #winning
Who knew that a royal screw-up could end up such a success. I may or may not have had 5 left over granola bars that never made it into their airtight containers. Maybe.
The Ultimate ‘Chewy’ Granola Bars
original recipe via Once Upon a Chef
Ingredients
- 6 tbsp Butter; unsalted
- 1/3 cup Brown Sugar
- 1/4 cup plus 2 tbsp Honey
- 1-1/2 tsp Vanilla
- 2 cups Oats; quick cooking or one-minute
- 1-3/4 cups Kamut Puffs
- 1/4 cup Wheat Germ
- 1/3 cup Cranberries
Instructions
- Line a 9 x 13-inch baking pan with aluminum foil and spray with nonstick cooking spray.
- In a large pot over medium heat, combine the butter, brown sugar and honey. Let boil and make sure to stir constantly. Lower the heat simmering until the sugar has dissolved completely. Remove the pan from the heat and stir in the vanilla.
- Next add in the oats, kamut puffs, wheat germ and cranberries and fold with a rubber spatula until well combined.
- Transfer the delicious mixture into the prepared pan and press down with a rubber spatula to even out. Place the pan in the refrigerator for around 2 hours to cool.
- Using the foil overhang, pull our your bars and transfer to a cutting board. Using a sharp knife, cut into rectangles and store in an airtight container in your refrigerator.
NOTE: I doubled the batch, as I was feeding a small army and this recipe doubled made 30 decent sized bars
