This entire meal was absolutely amazing, I can’t even begin to tell you…. but of course I’ll try.
The Blackened Chicken had just the perfect amount of heat, giving the Avocado Cream Sauce time to cool you down. The Cilantro Quinoa was the perfect part savory and citric that It almost put me into a trance…. just divine! I ate enough to satify, but let me tell you I could have ate the entire amount made for Sammy and I. Oh man! Dangerous! Luckly its quite healthy considering all the ingredients. I love a good healthy meal that leaves you full but not stuffed. The Blackened Chicken with Avocado Cream Sauce served with Cilantro Quinoa is just that. A match made in Foodie Heaven
2 Boneless Skinless Chicken Breasts
½ tsp Paprika
¼ tsp Salt
¼ tsp Pepper
¼ tsp Cayenne Pepper
¼ tsp Onion Powder
¼ tsp Cumin
1 Cup Quinoa
2 Limes | Juice and Zest
Salt and Pepper
2 tbsp Cilantro | chopped
Avocado Cream Sauce
1/2 Cup Greek Yogurt
Combine all dry seasonings in a small bowl. Season both sides of Chicken Breasts.
BBQ Chicken or Pan Fry until cooked.
Blend together Avocado, Greek Yogurt, Lemon Juice and Milk until smooth.
