I welcome Halloween with open arms because it means I get to eat and test out different Pumpkin Seed Recipes.
The other day Superstore had a HUGE SALE on their large pumpkins. They had priced then at $1.50 each with no minimums. I saw that as an opportunity to BUY ALL THE PUMPKINS and try out ALL THE PUMPKIN SEED RECIPES. For work purposes of course. I wanted to share my findings.
Can you believe, 4 large pumpkins gave us 6 cups of pumpkin seeds? I don’t think I have ever had that much to play around with. I sourced out some of the most delicious sounding recipes and put them to the test. Some sweet recipes but mostly savory. At the end of the day these 3 won for BEST PUMPKIN SEED RECIPES of 2019. At least for us they did.
PIZZA Pumpkin Seeds
1.5 cups Pumpkin Seeds
3 tsp Olive Oil
3 tbsp Parmesan Cheese or Nutritional Yeast
1.5 tsp Basil /dried
1.5 tsp Oregano /dried
3/4 tsp Salt
1/2 tsp Garlic Powder
PUMPKIN SPICE Pumpkin Seeds
1.5 cups Pumpkin Seeds
3 tsp Olive Oil
3 tbsp Brown Sugar
1.5 tsp Pumpkin Spice Powder
Pinch of Salt
DILL PICKLE Pumpkin Seeds
1.5 cups Pumpkin Seeds
3 tsp Olive Oil
3 tsp White Vinegar
2 tsp Dill //dried
1.5 tsp Garlic Powder
1.5 tsp Salt
1/4 tsp Black Pepper
TIPS ON COOKING PUMPKIN SEEDS
- SEED PREP; make sure that the pumpkin seeds are fully dry. If you have the time, clean them off of all the pumpkin guts and let them dry out overnight. I choose to do this on tinfoil or parchment paper versus paper towel so that it doesn’t stick
- BAKING TEMP; low and slow is how to you want to bake pumpkin seeds. set your oven to 300 degrees and bake them for 20 to 30 minutes. Turning and shuffling them around every 10 minutes
- TIP; bake your seeds in the oven on parchment paper, not tin foil and not silicone baking sheets. I have always found parchment to get the best roast.
Along with a basic sea salt and pepper, these 3 Pumpkin Seed Recipes have got to be my favorite. While I love the one that satisfy’s my sweettooth, the girls both prefer their savory flavors. It’s perfect, nobody fights. This right here is called a parent win.
